kcalFluffy chocolate pancakes, using chocolate protein powder for an extra protein boost. Topped with a chocolate peanut sauce.
Ingredients
60g oats
30g chocolate protein powder
1 tsp cocoa powder
60g 0% greek yogurt
1 tsp bicarbonate soda
1/2 tsp baking powder
1 large egg
5 tbsp unsweetened almond milk
Oil spray, for greasing
Sauce-
2 tbsp peanut butter
20g dark chocolate chips
3 tbsp unsweetened almond milk
Directions
- Add all the pancake ingredients to a blender and blend for 1-2 minutes, until fully combined and thick. Set aside.
- Next make the chocolate sauce. Add the chocolate chips and milk to a microwave safe bowl and microwave in 10 second increments until melted, mixing each time. As a next step, add the peanut butter to the melted chocolate and beat until fully combined. If you would prefer a thinner sauce, you can also add a little extra milk.
- Place a large frying pan on medium heat and spray with oil spray, allow the pan to get hot, then carefully pour some of the mixture into the pan to create a small disc. Fry for 2 minutes before flipping and cooking for a further minute. Repeat until all the mixture is used up.
- Stack the pancakes on a plate, top with a generous pouring of sauce.
