You can’t beat fluffy pancakes on a weekend! They really set me up for the weekend. Although I think these would be classed more as a dessert because of the chocolate peanut sauce.

The ingredients you need to make the pancakes are:

  • Oats
  • Chocolate protein powder
  • Baking powder & baking soda
  • Unsweetened almond milk
  • Cocoa powder
  • Greek yogurt
  • Egg

To make the sauce you will need:

  • Chocolate chips
  • Peanut butter

Fluffy chocolate pancakes, using chocolate protein powder for an extra protein boost. Topped with a chocolate peanut sauce.

Ingredients

  • 60g oats

  • 30g chocolate protein powder

  • 1 tsp cocoa powder

  • 60g 0% greek yogurt

  • 1 tsp bicarbonate soda

  • 1/2 tsp baking powder

  • 1 large egg

  • 5 tbsp unsweetened almond milk

  • Oil spray, for greasing

  • Sauce-

  • 2 tbsp peanut butter

  • 20g dark chocolate chips

  • 3 tbsp unsweetened almond milk

Directions

  • Add all the pancake ingredients to a blender and blend for 1-2 minutes, until fully combined and thick. Set aside.
  • Next make the chocolate sauce. Add the chocolate chips and milk to a microwave safe bowl and microwave in 10 second increments until melted, mixing each time. As a next step, add the peanut butter to the melted chocolate and beat until fully combined. If you would prefer a thinner sauce, you can also add a little extra milk.
  • Place a large frying pan on medium heat and spray with oil spray, allow the pan to get hot, then carefully pour some of the mixture into the pan to create a small disc. Fry for 2 minutes before flipping and cooking for a further minute. Repeat until all the mixture is used up.
  • Stack the pancakes on a plate, top with a generous pouring of sauce.
