BBQ PULLED CHICKEN LOADED FRIES

The perfect high protein fakeaway recipe. Pulled chicken, coated in a creamy BBQ sauce, spooned over crispy homemade fries topped with a generous amount of cheese.

Ingredients

  • 200g chicken breast

  • 550g maris piper potatoes

  • 1 tbsp roast potato seasoning (or other seasoning like cajun)

  • 50g BBQ sauce

  • 40g light cream cheese

  • 90g grated cheese, I used a four cheese mix

  • 1 tbsp sriracha mayo

  • 1 spring onion, green end sliced

Directions

  • Place the chicken breast into a pan of salted boiling water and poach for 15-20 minutes, until cooked through. Remove and set aside.
  • Meanwhile, slice the potatoes into fries. Add to an air fryer basket (or oven tray) and toss in then seasoning and olive oil cooking spray. Cook for 25 minutes at 195°c (oven 200°c for 30 minutes).
  • Shred the cooked chicken and then add the cream cheese and BBQ sauce, stir together.
  • Place the fries in an oven proof dish or keep in the air fryer basket, top with the pulled BBQ chicken and sprinkle over the cheese.
  • Bake for 10-15 minutes until golden and melted.
  • Top some sriracha mayo and spring onions.
