Ingredients
200g chicken breast
550g maris piper potatoes
1 tbsp roast potato seasoning (or other seasoning like cajun)
50g BBQ sauce
40g light cream cheese
90g grated cheese, I used a four cheese mix
1 tbsp sriracha mayo
1 spring onion, green end sliced
Directions
- Place the chicken breast into a pan of salted boiling water and poach for 15-20 minutes, until cooked through. Remove and set aside.
- Meanwhile, slice the potatoes into fries. Add to an air fryer basket (or oven tray) and toss in then seasoning and olive oil cooking spray. Cook for 25 minutes at 195°c (oven 200°c for 30 minutes).
- Shred the cooked chicken and then add the cream cheese and BBQ sauce, stir together.
- Place the fries in an oven proof dish or keep in the air fryer basket, top with the pulled BBQ chicken and sprinkle over the cheese.
- Bake for 10-15 minutes until golden and melted.
- Top some sriracha mayo and spring onions.
