Chocolate & Peanut Butter Heart Biscuits

A crisp, chocolate and peanut butter heart shaped biscuit. Stamped with a cute message, the perfect gift!

The lovely team from Baking Mad sent me some baking goodies in the post, including Silverspoon sugar, Allinsons Flour, a heart shaped cutter and a cookie stamper reading ‘consider this a hug in a biscuit’

The biscuits are really easy to make and only require a few simple ingredients! Once the dough is chilled and ready to roll out I used a large heart shaped cutter and biscuit stamper. I really enjoyed making these biscuits, I felt like I was baking love into each one. I actually sent 3 of my best friends some in the post, and it was the most rewarding thing, as Britain is currently in lockdown, I really miss seeing my friends and I wanted to show them that and give them a little pick me up. I packaged them up in some cellophane bags, tied with some string and a label, then posted them in cardboard boxes.

Chocolate & Peanut Butter Heart Biscuits

A crisp, chocolate and peanut butter heart shaped biscuit. Stamped with a cute message, the perfect gift!

Ingredients

  • 100g unsalted butter, room temperture

  • 100g peanut butter

  • 200g golden caster sugar

  • 1 medium egg

  • 300g plain flour

  • 40 g cocoa powder

  • 1 cookie stamp

Directions

  • Add the butter, peanut butter and sugar to large bowl and beat until smooth and really well combined. (I like to use my Kitchen Aid for this).
  • Add the egg and beat again until full combined.
  • Sift in the flour and cocoa powder and mix slowly until a thick dough forms. Bring the dough together with your hands, then wrap in clingfilm and chill for 30 mins.
  • Preheat the oven to 180°c and line two large baking trays with parchment.
  • Roll the dough out until 5mm thick and cut out roughly 20 hearts with a cutter.
  • Stamp each heart with a cute message, then transfer to the baking tray.
  • Bake for 10-12 minutes. Allow to cool for a few minutes on the tray before transferring to a wire rack to cool completely.
