Now summer time is officially here, I’m celebrating by making this delicious strawberry and goats cheese salad.
I love the flavours and textures in this salad. Firstly strawberries marinated in balsamic vinegar and olive oil. This is such a unique flavouring but trust me it works, this tangy combo pairs beautifully with the creamy goats cheese and the sticky honey mixed seeds, to add that little crunch.
Strawberry & goats cheese and salad with crunchy mixed seeds

Ingredients
200g strawberries, hulled and quartered
2tbsp balsamic vinegar
1 tbsp extra virgin olive oil
80g rocket
80g goats cheese
40g mixed seeds
1/2 tsp smoked paprika
15g honey
Directions
- Place the chopped strawberries in a large bowl and mix in the balsamic vinegar and 1/2 a tablespoon of olive oil. Leave to marinate for 15 minutes.
- Meanwhile, put a frying pan over a low-medium heat. Toast the seeds for a couple of minutes until they begin to pop, stirring regularly.
- Add the smoked paprika, honey and rest of the olive oil and stir until well combined. Removed from the heat and tip into a bowl to allow the seeds to cool.
- Toss the rocket leaves through the strawberries and divide between 2 plates. Crumble the goats cheese over both plates and scatter the seeds on top to serve.
