Sometimes a fuss free recipe is what you need and this pulled pork is the perfect for those days when you can’t be bothered to cook!
It takes less than 10 minutes to prep and cooks slowly throughout the day for a delicious evening meal.
I served mine in a toasted brioche bun, coleslaw and salad. But this would also be great in lettuce boats for a low carb option. Or any left overs can be served on top of salads or even a Mac and cheese!

Slow cooker BBQ pulled pork

Ingredients
1.3-1.4kg Pork shoulder, trimmed of excess fat
100g onion, finely diced
170g tomato ketchup
50g tomato purée
4 tbsp apple cider vinegar
1 tsp paprika
1 tsp garlic powder
1 tsp mustard powder
1 tsp cumin
Directions
- In the bowl of the slow cooker, combine the onion, ketchup, tomato purée, cider vinegar, paprika, garlic powder, cumin and mustard powder.
- Season the pork shoulder with salt and pepper, then add to the slow cooker bowl and cover fully in the sauce.
- Put the lid on the slow cooker and cook on low for 10 hours, until the pork easily falls apart when pulled (or 5-6 hours on high, but tastes better if you can cook it low and slow).
- Remove the pork, place in a bowl and pull the pork with two forks until it is well shredded. Combine with the sauce from the slow cooker and serve!
