What a treat these were for such little effort. Thats what is so great about slow cooker recipes, and because they have cooked over a long period they are packed with flavour! Im a big fan and will definitely create more easy slow cooker recipes in the future!

Slow cooker pulled chicken tacos

Slow cooker pulled chicken cooked in a delicious salsa, served with crispy taco shells and sour cream.

Ingredients

  • 3 chicken breasts

  • 3 mixed colour peppers, cut into small cubes

  • 1 tsp chilli powder

  • 1 tsp ground cumin

  • 2 tsp minced garlic

  • 600g salsa

  • To serve-

  • Tacos or tortillas

  • Sour cream

  • Jalapeños

  • Guacamole

  • Shredded iceberg lettuce

Directions

  • Switch the slow cooker onto the low setting to pre heat. Add the salsa, chilli powder, ground cumin, peppers and garlic and mix thoroughly. Place the chicken breasts in and stir to fully coat in the sauce. Place the lid on the slow cooker and cook on low for 8 hours.
  • When the chicken is starting to fall apart, remove the chicken breasts into a bowl and shred with two forks. Place the shredded chicken back in the slow cooker and mix well with the sauce.
  • Serve in tacos with shredded lettuce, guacamole, sour cream and jalapeños.

Notes

  • Calories stated is for the pulled chicken to serve 4. Serving choices are extra.
