Looking for a speedy lunch? Look no further then this speedy smashed chickpeas on toast. Ready in under 10 minutes, is super filling and uses store cupboard ingredients. Every time I make this recipe I wonder why I don’t have it more!
This recipe is perfect if you’re on the go and don’t like to ‘meal prep’. While the toast is grilling this delicious filling is whipped up in no time. It consists of;
- Green pesto (homemade if you prefer)
- Lemon juice
- Chickpeas
I also like to add a good pinch of salt but as the feta is quite salty its totally optional.
I like to mash the chickpeas with a potato masher, to break them down a little and I find it helps them hold the pesto and lemon juice. The chickpeas provide a great source of protein and fibre, keeping you fuller for longer.
I use a store bought pesto, just for ease and the whole reason for this recipe is to be speedy! But if you have more time on your hands and would like to make a homemade pesto then I recommend this one from Jamie Oliver or if you would live a vegan option this one from BBC Good Food.

Smashed pesto chickpeas with crumbled feta on toast

Ingredients
4 slices of seeded or sourdough bread
1x 400g can of chickpeas, drained and rinsed
1/2 a lemon, juiced
40g green pesto
40g feta cheese
Directions
- Place the bread in toaster and toast to your liking.
- While the toast is on, add the chickpeas to a bowl, mash a little with a potato masher.
- Add the pesto and lemon juice and stir through.
- Top the toast with the chickpea filling and crumble over the feta cheese.
