You have to try this recipe, it’s super simple, uses in season asparagus and tastes unreal!
If like me, you love goats cheese then this recipe is for you, paired with tangy and sweet balsamic onions and topped with some fresh in season veg, I chose asparagus but you can use anything that’s in season. Asparagus is in season April-May time.
What I love about this recipe is it requires minimal, no fuss ingredients and hardly any actual cooking… winner!

Spring Puff Pastry Tart

Ingredients
1 large red onion
1 tsp olive oil
1 tbsp balsamic vinegar
20g honey
375g pack ready rolled lighter puff pastry
125g goats cheese
100g reduced fat creme fraiche
125g asparagus tips
Directions
- Add the olive oil and sliced onion to a large pan and sweat for 10 minutes.
- Meanwhile preheat oven to 180°c and line a large baking tray with parchment.
- Once the onion is soft, add the balsamic vinegar and honey and cook for a further 3-5 minutes until reduced, then set aside.
- Mix together the goats cheese and creme fraiche in a bowl, mashing the goats cheese until fully combined.
- Roll the pastry out onto the prepared baking tray, spoon the goats cheese on top and spread out, leaving a 1cm border round the edge.
- Scatter over the balsamic onions, then place the asparagus tips on top. If any of the stems are thick, slice in half before placing on.
- Place in the oven for 20 minutes, until risen and golden. Serve with an extra drizzle of honey and a side salad.

Hi Nina, I would recommend a soft cheese, like cream cheese instead. Tenderstem broccoli would work well here too! Hope that helps
