Indulge Guilt-Free: Healthy Creme Egg Cookies Recipe. A delicious, chewy chocolate cookie, filled with Mini Eggs and topped with Mini Creme Eggs.

Ingredients

  • 50g unsalted butter, room temp

  • 100g PureVia brown sugar alternative

  • 1 medium egg

  • 1 tsp vanilla bean paste

  • 110g plain flour

  • 10g corn flour

  • 15g cocoa powder

  • 1/4 tsp bicarbonate of soda

  • 16 mini eggs, chopped into small pieces

  • 6 Creme egg minis

Directions

  • Place the creme eggs in the freezer for 1 hour minimum.
  • To a bowl, add the butter and brown sugar, beat for 5 minutes until combined and fluffy.
  • Add the egg and vanilla extract and beat again until combined.
  • Sift in the flour, corn flour cocoa powder and bicarb. Add a pinch of sea salt then fold the mixture together until a thick dough forms.
  • Add the chopped mini eggs and use your hands to distribute into the dough.
  • Roll the dough into 6 even sized balls and place spaced out onto a lined baking sheet. Press down to form a disc.
  • Halve the frozen Creme Eggs and lightly press two halves on top of each cookie.
  • Bake for 5-8 minutes at 190c, allow to cook slightly before serving!
