Ingredients
50g unsalted butter, room temp
100g PureVia brown sugar alternative
1 medium egg
1 tsp vanilla bean paste
110g plain flour
10g corn flour
15g cocoa powder
1/4 tsp bicarbonate of soda
16 mini eggs, chopped into small pieces
6 Creme egg minis
Directions
- Place the creme eggs in the freezer for 1 hour minimum.
- To a bowl, add the butter and brown sugar, beat for 5 minutes until combined and fluffy.
- Add the egg and vanilla extract and beat again until combined.
- Sift in the flour, corn flour cocoa powder and bicarb. Add a pinch of sea salt then fold the mixture together until a thick dough forms.
- Add the chopped mini eggs and use your hands to distribute into the dough.
- Roll the dough into 6 even sized balls and place spaced out onto a lined baking sheet. Press down to form a disc.
- Halve the frozen Creme Eggs and lightly press two halves on top of each cookie.
- Bake for 5-8 minutes at 190c, allow to cook slightly before serving!
