Sharing double chocolate baked cookie dough, Pizza Hut style!

This is my go to dessert when we have friends over or Jordan and I fancy something sweet post dinner! A really indulgent treat!

Have you ever had Pizza Hut’s baked cookie dough? If you know then you know… this recipe is based on that very recipe, giving you a crisp top and gooey centre!

I used half peanut butter/half unsalted butter… purely because I like the peanut butter flavour and it’s so great with a chocolate pairing. You can use all butter in it’s replacement if you need this recipe to be nut free or don’t like the taste, but I highly recommend!

Now there’s a fine line when it comes to baking a cookie dough… you want set, but gooey. I like to start testing mine at the 10 minute mark, I insert a skewer and want to see a fudgey texture cling to the skewer, not raw but like fudge!

This is great date night in dessert too! You can really get creative with toppings, why not drizzle over some more peanut butter, or maybe your favourite spread Nutella, Biscoff? Crumble over some biscuits and scoop on your favourite icecream!

Sharing double chocolate baked cookie dough, Pizza Hut style!

Ingredients

  • 40g unsalted butter

  • 40g smooth peanut butter

  • 60g Natvia granulated sweetener or caster sugar

  • 1 tsp vanilla extract

  • 1 medium egg

  • 20g cocoa powder

  • 40g plain flour

  • Pinch of salt

  • 1/2 tsp bicarbonate soda

  • 40g chocolate chunks (I used white chocolate)

  • Ice cream, to serve (optional)

Directions

  • Preheat the oven to 170°c and lightly grease a skillet.
  • Mix together the flour, cocoa powder, salt and bicarbonate of soda.
  • In a separate bowl beat together the butter, peanut butter, sweetener and the vanilla extract. Add the egg, beating again to incorporate.
  • Fold in the flour mixture, then once it’s all mixed in, fold in the chocolate chunks.
  • Spoon the dough into the skillet and bake in the oven for 15 minutes.
  • Leave to cool for a couple of minutes before serving with scoops of your favourite ice cream!
