This is the ultimate weekend comfort food. I never thought I liked gnocchi until I made this. Soft potato like dumplings in a thick tomato & chorizo sauce topped with golden mozzarella and fresh basil.
The chorizo adds amazing flavour and baking the dish for 15 minutes really thickens up the tangy tomato sauce.
What is gnocchi? Well it’s “a variety of pasta consisting of various thick, small, and soft dough dumplings that may be made from semolina, ordinary wheat flour, egg, cheese, potato, breadcrumbs, cornmeal or similar ingredients”. I find it much more comforting than regular pasta now!
The final part the cheesy top made from torn mozzarella baked until golden, heavenly!

Ingredients
50g chorizo, diced into small chunks
1 onion, finely diced
2 cloves of garlic, minced
160g mixed peppers, cut into thin strips
2 400g tins of chopped tomatoes
1 tbsp smoked paprika
1 tsp cayenne powder
1 bunch basil, leaves picked and roughly torn
500g fresh gnocchi
150g mozzarella
Parmesan to serve
Directions
- Preheat the oven to 180°c.
- Heat a large non stick saucepan over a medium high heat, add the chorizo and fry until oils start to release from the chorizo.
- Add the onion, peppers and garlic and fry for 3-4 minutes until soft.
- Pour the tinned tomatoes into the dish along with the paprika, cayenne, fresh basil and gnocchi. Stir well to combine and leave to simmer for 5 minutes.
- Transfer to a large oven dish when the gnocchi is soft. Tear the mozzarella on top and bake in the oven for 15 minutes, until bubbling and golden brown.
- Serve with a sprinkle of Parmesan on top.
