Simple chocolate chia pudding, thick mousse like texture, ready in just 10 minutes!
This is my new go to sweet treat after dinner. It’s made with all natural ingredients and is nourishing your body.
What are chia seeds?
If you are new to using chia seeds they are tiny little black seeds from a Salvia hispanica, a flowering plant in the mint family native to central and southern Mexico. They are best known for being high in fibre, protein and omega 3, so a really good addition to any diet.
When added to a liquid they expand, become soft and have a gel like consistency. They are often use as egg replacement in vegan baking as they act as a binder.
Here I have used them to bind all of the pudding ingredients as well as providing your daily 15g dose of chia seeds!
I used smooth peanut butter for extra creaminess… it honestly makes a massive difference, so don’t skip it!

Ingredients
15g chia seeds
50g greek yogurt 0% fat
40ml unsweetened almond milk
8g cacao powder
1.5 tbsp maple syrup
20g smooth natural peanut butter
Directions
- Add all the ingredients to a bowl and whisk until smooth and combined.
- Spoon into a serving glass and refrigerate for 10 minutes.
- Top with fresh berries if desired.
