Creamy Tuscan Chicken Pasta

A simple, healthy, Creamy Tuscan Chicken pasta recipe, packed with flavour and ready in just 20 minutes.

Ingredients

  • Low calorie cooking spray

  • 1 red onion, diced

  • 300g chicken breast, diced

  • Pinch of salt and black pepper

  • 2 garlic cloves, mined

  • 100g sun-dried tomatoes, chopped

  • 1 tsp italian seasoning

  • 100g baby spinach leaves

  • 225g rigatoni pasta

  • 3/4 cup reserved pasta water

  • 30g parmesan cheese, grated

  • 200g creme fraiche (reduced fat)

Directions

  • Place the pasta on to boil for 10-12 minutes until al dente. Drain and set aside.
  • Meanwhile, spray a large sauté pan with low calorie cooking spray. Add the diced onion and fry for 5 minutes until soft. 
  • Add the diced chicken with a good pinch of salt and pepper. Cook until browned all over, then add the minced garlic, sun dried tomatoes, Italian seasoning and spinach leaves. Stir this all together and allow the spinach leaves to wilt.
  • Add the cooked pasta, reserved pasta water, parmesan and creme fraiche and stir this all together until combined. Cook for 5 minutes until everything is piping hot.
  • Serve straight away.
