Baked Vanilla Protein Crumpets

A super simple way to pimp up your crumpets, with an added protein, mixed berries and white chocolate.

This is my new go to brunch on a weekend, so easy and SO tasty! I don’t why it’s taken me this long to bake crumpets!

I topped mine with some frozen mixed berries and some chopped white chocolate but choose your favourite toppings and spreads.

I use a 1lb small loaf tin, I’ll link the ones I use below (Amazon affiliate link). They’re great for smaller batch baking and perfect for baked crumpets!!

A super simple way to pimp up your crumpets, with an added protein, mixed berries and white chocolate.

Ingredients

  • 2 crumpets

  • 1 medium egg

  • 15g vanilla protein powder

  • 50ml unsweetened almond milk

  • Handful of frozen mixed berries

  • 20g white chocolate, chopped

Directions

  • Preheat the oven to 180°c and spray a small 1lb loaf tin with olive oil spray
  • In a bowl whisk together the egg, protein powder and milk.
  • Cut the crumpets in half, then dip each piece into the mixture coating it on both sides.
  • Arrange the crumpet halves into the loaf tin, pour over any remaining mixture and scatter over some mixed berries.
  • Bake for 15-20 minutes, until golden and set. Serve with the chopped white chocolate scattered over!
