Fluffy Vanilla & Biscoff Protein Mug Cake

High protein fluffy vanilla mug cake with gooey Biscoff centre. Ready in less than 5 minutes!

When you need a little pick me up and don’t want to make a whole batch of treats then a mug cake is what you need. I usually share my mug cakes on a Monday, Monday’s need mug cakes. Monday’s are usually long, boring and for most people the worst day of the week. Well this fluffy vanilla mug cake with a Biscoff centre will make Monday’s more like Fridays. I mean anything with Biscoff in will brighten up my day!

I made my mug cakes in a small Nespresso mug . I’ve linked to the correct size ones. They are about half the size of a standard mug. If you want to do a standard sized mug, or you’ve had a particularly bad day, I’d double the recipe!

High protein fluffy vanilla mug cake with gooey Biscoff centre. Ready in less than 5 minutes!

Ingredients

  • 15g Greek yogurt (I used Fage 0%)

  • 30ml unsweetened almond milk

  • 1 tsp maple syrup

  • 15g plain flour

  • 10g vanilla protein powder

  • 1/4 tsp baking powder

  • 10g Biscoff Spread

  • (Optional) 1 Lotus Biscuit to crumble on top.

Directions

  • Mix all the ingredients apart from the spread and biscuit (if using) in a small mug (I used a Lungo sized Nespresso mug) until smooth.
  • Add the biscoff spread to the centre, then microwave for 60 seconds. Top with a crumbled Lotus biscuit.

  1. This is the most epically delicious protein mug cake I have ever come across. It’s truly so soft and fluffy, so simple, so yummy! I use full fat cows milk as it’s just what I prefer, and I drizzle my melted biscoff on the top after it’s cooked. Will safe this one for weekly use! Thankyou 😋
