This recipe is absolutely delicious, perfectly crispy potato skins, loaded with tuna, chives and cheese.
I wanted to share with you that the simplest of ingredients can be made into a satisfying lunch. I’m lucky that I have herb garden so I can easily add herbs to most of my recipes and the chives adds such a nice balance to the cheese and tuna.
Now the crispy skins, this is done by brushing the potatoes with olive oil and salt before oven baking, it really does make the perfect potato!

2 medium baking potatoes
1 tbsp olive oil
Pinch of salt
1 tin of tuna chunks, drained
30g greek yogurt
1 tsp fresh chives, chopped
60g cheddar cheese, grated
